These dates reflect the last (generally) safe date to place an order with Triple Mountain for Christmas delivery, and take into account that the order will ship the following day.
Of course, if you cannot order before the deadline, you can always print out a photo of the titems you've ordered, roll the picture up like a scroll and tie it with a ribbon to present to your gift recipient on Christmas, so they have something exciting to look forward to!
